They kept circling the same question: what if a bar left one thing out, and built everything else around that? Not a smaller idea. A bigger one. They thought about the people they knew: family members cutting back or people who just didn’t want a drink that night, and realized none of them had stopped wanting a good night out. They just stopped having anywhere to go. This space was created with hospitality in mind for those who choose not to imbibe.
So they spent months testing syrups, dialing in techniques, building a place where all of that could happen safely, normally, without anyone having to explain themselves. The name came easy after that. without. Because the point was never what wasn’t there. It was everything that still was.
